
One of the aspects that makes our country unique is the extraordinary
variety of ingredients and recipes that we can find all along the land.
There is always a time, however, when we feel like going back home, to find those familiar flavors that remind us of where we came from. This is what Alessandro Li Calzi, a. k.a. L’Orso in cucina, wanted to do with this cookbook, dedicated entirely to the flavors of his land: Sicily. There are the times spent with his family in Canicattì, the teachings of Grandma Piera, the tasty raw materials of the island and, of course, the recipes passed down orally in dialect. And so we find some dishes known to the general public, such as cannoli, arancini di riso and eggplant caponata, but also ancient and lesser-known preparations, such as cassatelle (or raviole), falsomagro and milanisa. Dishes that Alex has carried with him throughout his life and wants to share with his audience today.
